coconut macaroons

And an even easier dessert!
[I split this recipe in half and still got 26 cookies]

You will need:

3 c. shredded coconut, sweetened
4 large egg whites
3/4 c. sugar
1/4 t salt
1 t vanilla extract
1/8 t almond extract

-Preheat oven to 325
-Mix all ingredients together
-Place parchment paper or aluminum foil on 2 cookie sheets
-Drop rounded teaspoons of batter 1 inch apart on cookie sheet
-Bake for 20-25 minutes, until cookies have set and tops have browned, alternating cookies between top and bottom racks halfway through
-Let cool on cookie sheet for a few minutes and then transfer to wire rack to cool complete
-EAT!!!
